Lighter, less complex version of a traditional balsamic vinegar. Saba is not aged, rather it is bottled directly after the first heated reduction of the grape-must. Good for marinades, sauces, and dressings. A culinary treasure, Tradizionale is made of locally grown Trebbiano and Lambrusco grapes cooked down, and then aged in various wooden barrels of oak, chestnut, mulberry, cherry, ash and juniper, each one lending a unique aroma over 12 years. Its greatness is in its balance between sweetness, the first sensation one experiences, and acidity, which appears faintly afterwards. The integration of the two flavors, combining to make a whole and expressing themselves in succession is another of its amazing virtues.
